The Olympia Oyster Knife with 2-1/2 inch x 5/8 inch, 16 gauge  high carbon stainless steel blade with our tough “Murphy Green” polypropylene plastic handle. This shucker was designed in collaboration with Marco Pinchot of Taylor Shellfish Farms to specifically to open Kumamoto & Shigoku oysters.  The blade has a short (1″) four sided eased edge grind that gently tapers to the flat unground blade. Superior to other knives when opening these challenging small “pearls”, the Olympia will handle the larger East & West Cost varieties beautifully too.
